Curated by Executive Chef, Scott Hessel, and inspired by the great Scottish larder, the menu showcases his refined bold flavours with a modern twist, all to be enjoyed in the intimate, cosy and relaxed setting of the Highlandman.
Changing seasonally, the menu which also offers vegetarian options, aims to create surprise and delight for diners and utilises only the best Scottish produce and locally foraged ingredients where possible. The launch menu includes dishes of Hibernian scallop, Perthshire porcini and Ardgay venison.
Executive Chef Scott Hessel, said: “In my role I aim to grow and mentor my teams across the Crieff Hydro Family of Hotels and this past year we’ve really built on our talents and developed new food and brand concepts for the Tiffin, Terrace and Hub restaurants.
“TRYST at The Highlandman is an exciting project and we hope it will be a welcomed addition to our residential guests but also locals and visitors to Crieff who are looking to enjoy an elevated dining experience in the Perthshire countryside.”
The seven-course tasting menu TRYST at The Highlandman is available at 7pm Thursdays-Saturdays and Sunday lunch from 21st May 2021 and costs £65 per person. Guests can extend their celebrations at Crieff Hydro Hotel and enjoy the TRYST tasting menu with one night stay in a feature room, Scottish breakfast and access to the leisure facilities from £269 for two.
